What We Are Reading – July 14th

PinkaliciousAaron had to have this book when we saw it in Barnes and Noble. The reason? It was pink. Well mommy does not drop $18.00 on a book just because it is pink (it is his favorite color.) He had a mini-fit in the store (with that behavior he was definitely not going to get the book) and a bigger fit in the car. Once the crying stopped I asked him if he remembered what the book was about; his response, “Being pink”.  I was sure that given some time he would forget about the book.

The next morning he asked if we could go and get Pinkalicious. I told him that we would talk about the book and his behavior with his dad that evening and then we would decide. At dinner he apologized for the tantrum and asked if he could please have Pinkalicious. Call this bad parenting but if my kid wants something he will have to give me something in return. For Aaron that was going to be great behavior during the day, at dinner and bedtime. The kid was flawless. I thought to myself, What else can I use as leverage when the old stand by “just do it” fails? I keep seeing Huff Post articles saying that you should not bribe your kids; but I really doubt half of the people who write these things are actually parents. I do stickers for potty success and books for behavior. It works for me.Besides, bribes get things done! He knew what he needed to do and he did it.

On Sunday when the bookstore opened at 9:00am we bought Pinkalicious. Also on that day, he continued to be a gem of a kid. No I-have-what-I-want-and-now-I-can-act-a-fool tantrums. Sweet and sane for dinner, bath, and at story time where we read the prized Pinkalicious.

By the way…it is actually a really cute story and the pictures are a wonderful combination of photographs and paintings.

Friday Optimism

Something happens on Fridays. If you work a Monday through Friday job like I do, there is a little bit more spring in your step on this day. My officemate and I refer to this as “Friday Optimism”. No matter what goes down on this day, it doesn’t matter as the following day is Saturday –  the best day ever.

I am feeling very optimistic today and am looking forward to trying to get a few things done this weekend.  Let’s see how many of these I actually do:

Bunnie’s Blackberry Bonanza

Blogging mommy and party planning maven Bunnie Hilliard was gracious enough to do a wonderful guest blog post for me. She brought the gift of food into my world – more specifically blackberry based foods which are always perfect for the summer. All of these are definitely being added to my “need to cook” list and all of the photos are bringing me closer to making this purchase.

Hey!

I’ve been stalking Maria’s blog for a little while now and we finally hooked up with our munchkins for a play ground play date! They had a blast and so did we. I must say, it really felt like we were old friends.. I’m SO GLAD to know her…

So, Super excited to be hanging out on Maria’s blog today and sharing some of my favorite recipes for the summer. I’m no Martha Stewart (ahem), but I took the kiddo’s blackberry picking and needed an excuse to get creative with the gazillion blackberries we picked. I mean we could have just eaten them with breakfast and lunch (and snacks) for a few days, but this way the calories the YUMMINESS stuck around for a while.

So – HOORAY! I made Jam, and Sherbet, and (Blackberry) Oat Cake, (Oh My!!)… and some smoothies too. I’m not one to slave away in the kitchen all day so these easy summer recipes were right up my alley. Also, I think they could be easily substituted with other berries if you are so inclined.

 

First Up:

OAT CAKE WITH BLUEBERRIES AND BLACKBERRIES

ingredients

1/2 stick unsalted butter, softened, plus more for pan

3/4-cup all-purpose flour, plus more for pan

1 cup plus 3 tablespoons quick-cooking oats, divided

2/3-cup water

1/2-teaspoon baking soda

1/2-teaspoon baking powder

3/4-teaspoon coarse salt

1/2-teaspoon ground cinnamon

1/2 cup granulated sugar

1/2 cup packed light-brown sugar

1 large egg

 

preparation

Preheat oven to 350 degrees. Butter and flour an 8-inch square metal baking pan, tapping out excess flour. Combine 1 cup oats and water and let stand until oats have softened, about 5 minutes. Meanwhile, whisk together flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.

Beat together butter, granulated sugar, and brown sugar in a medium bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Reduce speed to medium and beat in egg and vanilla until just combined, scraping down sides of bowl if necessary. Add flour and oat mixtures and beat on low speed until just incorporated. Fold in about half of berries.

Spread batter in pan and sprinkle with remaining 3 tablespoons oats and sanding sugar. Scatter remaining berries evenly over top. Bake until a toothpick inserted in center comes out with moist crumbs attached, 40 to 45 minutes. Let cool on a wire rack 30 minutes; cut into squares.

 

 BLACKBERRY MANGO SMOOTHIE

ingredients

1 cup mango chunks

1 sprig of mint

3 ice cubes

1/2 cup blackberries

1/4 cup plain greek yogurt

preparation

Purée 1 cup frozen mango chunks, ice cubes, 1/2 cup strained blackberries, 1/4 cup plain greek yogurt, and 1 tablespoon in a blender until smooth.

 

 

BLACKBERRY BUTTERMILK SHERBET

ingredients

2 cups fresh or frozen blackberries

1 cup sugar

2 cups buttermilk

1 teaspoon vanilla extract

Garnishes: fresh blackberries, lemon rind strips, mint

preparation

Process blackberries in a food processor or blender until smooth, stopping to scrape down sides. Press blackberries puree through a fine wire-mesh strainer into a large bowl, discarding solids. Add sugar, buttermilk, and 1 teaspoon vanilla extract to bowl, and stir until well blended.

Pour blackberry mixture into freezer container of a 4-quart ice-cream maker, and freeze according to manufacturer’s instructions. Garnish each serving, if desired.

 

 

 

BLACKBERRY BASIL JAM

ingredients

For the Jam:

2 1/2 pounds fresh blackberries

6-8 sprigs of basil

1 1/2 cup granulated sugar

juice of half a lime (or lemon)

Additional Equipment:

(3) 8-ounce jelly jars with fresh lids

preparation

Rinse the berries in cool water, and toss in sugar. Allow to macerate, refrigerated, overnight.

In a large sauce pan, warm the berries and basil over medium heat, until softened.

Press the mixture through a fine mesh sieve or food mill, to remove the seeds and basil.

Submerge the jars in a large pot of boiling water, for 10 minutes. Keep warm.

Place the puree back in the sauce pan, and heat, over medium heat, until thickened.

Place the lids into simmering water to soften the seal.

Taste the jam, and adjust seasoning, if needed. When it has reached the desired consistency, spoon it into the hot jars.

Wipe the edge of each jar with a clean cloth, and place the lid on. Screw on the rings and submerge in boiling water for 10 minutes.

Remove with tongs, and allow to cool.

 

**Any leftover jam can be kept, refrigerated, for 2-3 weeks. Jam that has been properly processed (the button on the lid should not pop up and down) can keep in a cupboard for several months.

Monday Morning Gets a Bad Wrap; But Sunday Night Can Be A B*TCH Too!

Last night at 9:30pm my stomach decided to do flips and twists in the middle of The Talking Dead summer special. Was it the wonderful dinner I had cooked? Would the hubs and the kid get sick too? Would I puke on the den carpet because I was too engrossed in the TV show to get to the toilet in time? I willed the queasiness away.

Last night at 11:45pm the boy cried out. Had he puked? Many prayers were said as I walked down the hall towards his room. No puke; but the bug bites (he is so allergic to bug bites) that he collected over the weekend were giving him a fit. Calamine lotion, soothing voice, glass of water and then I leave the room.

This morning at 12:45am the wee lad cries out again. I pray for no vomit. Nope, he is still itchy and thirsty and now hot. I go into the hall to turn up the air conditioning and only get an odd noise. SERIOUSLY? I open his door to let in the cooler air coming up from downstairs that has made the master bedroom comfortable. I lay down beside him and fall asleep until…

1:15am the kid is tossing and turning making himself too hot to cool off. Still itchy and thirsty I give him water, a dose of Benadryl, and some soothing words. I wish someone would give me some soothing words because we all know the panic spiral your brain goes down at 1:15am on a school night!!! I had a presentation at 8:00am. Would I wake up with my alarm? Is my alarm set? Would the kid ever go to sleep?

This morning at 3:15am I was still awake but the boy was asleep. I decide to creep back into bed with the hubs. My mind shifted from typical late night panic attack topics, to a constant string of prayers that the boy would not wake up again.

This morning at 5:45am the alarm goes off. Somehow I make it out the door with a jovial kid, two blueberry muffins and a huge cup of coffee. I am also dressed appropriately to make a presentation in front of college students.

On this day, Sunday night and Monday morning tag teamed me trying to show their muscles. Whatever fools – I’ve got this. I have no idea what I said during my presentation; but I received very positive feedback on it so it’s all good!!

Bring it on Tuesday!

Just kidding – please be nice to me.
