I’d Like to Eat – Blueberry Croissant Puff

This easy to prepare dish that I found here on Pinterest is great for weekend brunch, or anytime you feel like stuffing your face with baked fruity goodness. I came across it while looking for food options when I have a lille more time to cook and enjoy the fruits of my labor. We made it for Christmas brunch and it was a crowd favorite. The taste is sweet but not too sweet and the croissants don’t become mush with the addition of the milk and the eggs.
Blueberries I plan on making the dish again when we have a relaxing weekend with the husband in town. The next incarnation will be made using strawberries, peaches or possibly bananas, and will definitely include cinnamon.

A scoop of ice cream

I’d Like to Eat – Ritz Cracker Ice Cream Sandwiches

When I saw this on Pinterest it was a no brainer that I was going to pin it. Who wouldn’t want to eat these? Don’t do the gluten in the cracker? Whatever. Can’t have the lactose in the ice-cream? Suck it up butter cup. Take a pill and deal with it.  Salty crunchy ice creamy tastiness is to be had.

This is the second recipe I have posted that uses Ritz Crackers. The first one, for Baked Cheesy Ritz crackers, can be found here. I am a fan butter and salt and adding sugar to them is my holy trinity.

I’d Like to Eat Pumpkin Spice Marshmallows

Just like most other people this time of year; I am a fool for pumpkin flavored treats. It doesn’t help that they are available everywhere and you can’t throw a stick without hitting a latte or muffin in that flavor. I came across this recipe for easy to make treats that pumpkin lovers of every size will love.

Materials:

  • Marshmallows
  • Pumpkin Spice
  • White Chocolate
  • Granulated Sugar
  • Parchment Paper
  • Cookie Sheet
  • Wooden Skewers
  • Pumpkin Spice
    • 1/3 cup ground cinnamon
    • 1 tablespoon ground ginger
    • 1 tablespoon ground nutmeg
    • 1-1/2 teaspoons ground cloves
    • 1-1/2 teaspoons ground allspice

Instructions:

1. Mix pumpkin spice dry ingredients. Add granulated sugar. Sit aside
2. Melt white chocolate in double boiler
3. Place marshmallows on the end of skewers.
4. Dip marshmallow in melted white chocolate.
5. Roll marshmallows in pumpkin spice sugar mixture
6. Place marshmallows on parchment-lined cookie sheet, and move to                refrigerator to allow chocolate to cool and harden.

I’d Like to Eat Crunchy Pumpkin Seeds

We carved pumpkins with the boy this weekend. We were left with a work of art and a pile of icky, seedy goo. Did you just throw yours in the garbage? Not us Pinkeltons. The husband grabbed the pot full of goo and prepared these tasty roasted pumpkin seeds.
