I’d Like to Eat – Blueberry Croissant Puff

This easy to prepare dish that I found here on Pinterest is great for weekend brunch, or anytime you feel like stuffing your face with baked fruity goodness. I came across it while looking for food options when I have a lille more time to cook and enjoy the fruits of my labor. We made it for Christmas brunch and it was a crowd favorite. The taste is sweet but not too sweet and the croissants don’t become mush with the addition of the milk and the eggs.
Blueberries I plan on making the dish again when we have a relaxing weekend with the husband in town. The next incarnation will be made using strawberries, peaches or possibly bananas, and will definitely include cinnamon.

Well we finally have the kid nestled in his bed. I don’t know if there are visions of sugar plums dancing in his head. More than likely, it will be filled with visions of sugar cookies and super heroes. It had been a busy day here in the Pinkelton house. Here is a quick list of what’s been going on between our decked walls.

Smoked Trout Spread for Your Weekend Happiness

I took this photograph on New Year’s Day at my friend Victor and Rachel’s brunch. The bowl to the left is filled with the yummiest schmear of all time. It is smoked trout spread.

I forgot to get the recipe on that day; but last weekend when I had them along with other friends over for brunch they came and brought some with them. That was Sunday and I have eaten far too much of it this week. Not to say I’m going to stop anytime soon – this stuff is good on bagels, crackers, carrot sticks, EVERYTHING. And I was smart enough to get the recipe this time.

When you have the love you have to share the love so here goes. From the house of Stopeck,
I bring you Smoked Trout Spread:

Get a big bowl and mix…….

1 pack of 8oz cream cheese
1/4 cup sour cream
2 big ass table spoons of prepared horseradish
A bit more than a little dill
1 package of smoked trout ( if you can get white fish even better)
and a bit of lemon juice
Mash it all up till smoothish( I like texture) then DONE!!!

 

It’s Ladytime! And I Don’t Mean Aunt Flo is in Town!

This week I successfully made the time to schedule the time to hang with some of my lady friends. Why is that so hard to do? They are very important to me and such a port in this sometimes stormy life; but damn if it isn’t next to impossible to sync up our schedules. On Sunday I am having my lady friends, along with their little crotch nuggets, over for brunch. This civilized and accepted vehicle for the earliest of day drinking is my favorite meal. Carbs, bacon,  and booze – you can’t go wrong!

I plan on whipping up this easy scrambled egg recipe from Anthony Bourdain and visiting this legendary market for freshly baked croissants, ready made quiches. and organic fruit on the cheap.  The offers of bottles of bubbly immediately poured in once the gathering was announced. You cannot have brunch without mimosas! However, one of my pals is preggers so I found a great mocktail recipe for Virgin Cucumber Mojitos that can be spiced up for those ladies who aren’t expecting. This drink is easy to make and stays well in your fridge if you have any left over (yeah cause that’s gonna happen). To make your own you will need:

One lime sliced
Juice of one lime
2 sprigs mint
1/4 cucumber, peeled and seeds removed
1 tablespoon honey
Ice
Club soda

Toss the lime juice, mint, cucumber, 1/4 of a cup of the club soda, and honey into a blender and blend until smooth. Fill a hi-ball glass with ice, pour in some of the mixture. Add more club soda if you are going virgin. Add white rum if you are not.

Missing your girls? Invite them and their tots over. Have a drive-thru potluck welcoming such dishes as a dozen Krispy Kreme donuts and plates of Zaxby’s chicken tenders. Preparing eats for your lady time should not be hard work, getting you all together will be hard enough.
