I’d Like to Eat – Ritz Cracker Ice Cream Sandwiches

When I saw this on Pinterest it was a no brainer that I was going to pin it. Who wouldn’t want to eat these? Don’t do the gluten in the cracker? Whatever. Can’t have the lactose in the ice-cream? Suck it up butter cup. Take a pill and deal with it.  Salty crunchy ice creamy tastiness is to be had.

This is the second recipe I have posted that uses Ritz Crackers. The first one, for Baked Cheesy Ritz crackers, can be found here. I am a fan butter and salt and adding sugar to them is my holy trinity.

Stop licking the screen

 

Mama had to make amends at dinner on Tuesday and prepare this groovy Blueberry and Corn salad. We had it with baked sweet potatoes, kale slaw, and fruit salad. Seeing as our Monday obviously was not meatless, I thought I’d celebrate vegetables on Tuesday.

I stumbled across the recipe at A Healthy Life for Me and thought it was so pretty. The kid loves cucumber, blueberries, and corn so how could it not be a winner. Also, it was perfect for my need to bring my body back from the brink of hypertension after that hot mess of a kick ass burger.

Everything in moderation. Even moderation.

This Weekend

This pilot wife was able to get out without the husband or the boy on Saturday night. The Goat Farm, which is one of the most magical places in Atlanta. Both me and my friend Carla agree that every time we go there we are bound to see something cool. This trip was no different. The Creatives Project designed an evening of live music, art , and record making. The band Book Club is now a new favorite.

Sunday was another winner with a meeting with this woman to discuss her trip to the Redwoods State Park in California; and lunch at The Imperial in Oakhurst. Have you been to this new spot yet? They have only been open for a few months and don’t even have a sign out front. I am sure once they do I will not be able to get a table as quickly. I recommend the queso, any burger, and the chicken tenders. To wash the meal down I had a Leffe Blonde. It made for the cherry on top of the warm late winter Sunday.

snow for ice cream

When In Nome…

Well we aren’t really in Nome(Alaska) ; but dang if it doesn’t feel like it. This snowy/sleety weather has been a beast; however this morning I decided to make the best of it – and make something of it. After making many forts, Lego towers, and messes I finally got the boy to help me create a snack to eat.

With four simple ingredients – snow, milk, sugar, and vanilla extract; we made snow ice cream. I used a single serve ice cream dish to mix it all. Add ingredients to the taste and consistency that you like best.
