I think the 4th of July holiday can count as the official halfway point of summer. I passed an elementary school yesterday with a sign that read “SCHOOL STARTS AUG 4th!” The way the new rules go, kids start school in the heat of it all rather than the month of September. No matter what the board of education says as long as the weather is warm beaches call our name (I recommend Hilton Head) and the latest good book fill our brains.

Don’t lose hope that summer is ending, there are still pools, pedicures, and parties to be had. And you don’t need to leave town to relax and reboot. That weekly two-day holiday called Saturday and Sunday are always full of possibilities.

Feta? With Cranberries? You’re On!

I am a sucker for a pretty food picture and this grilled wedge salad with fried egg and strawberry feta from My Name is Yeh looks wonderful.  Consider this my next challenge to actually make after I have pinned it on Pinterest. It has eggs, it has cheese, it has fruits and veggies and it has the world’s greatest food – BACON!!

What We Are Reading, July 2nd

Joe brought the gift of Marvel into our home this week. We are both loving this series about freshly turned superhero who also happens to be a Muslim teenager simply trying to fit in. I will be taking a trip to Criminal Records to pick up the next two books.

 

Red Knit Cap Girl

 

This book has gorgeous paintings that are done on pieces of plywood. Aaron loves the story and the sweet ending. We picked ours up at the library and I will have to buy our own copy before we return this one. Writer and artist Naoko Stoop has written a total of three adventures of this wonderful girl and I can’t wait to read them to the boy.

A Bowl and Chopsticks

I was up way too late last night and stumbled upon these picnic bowl recipes on the 101 Cookbooks website. The ginger soba noodle bowl is looking mighty good as I am a carb slut and ginger dressing is a gift from GOD! We already have tarragon and tofu at the house so this may happen this week. Fingers crossed people!!!

Update:

After picking up these Soba noodles, shallots, grilled chicken breast (too lazy too cook the tofu the original recipe asks for), and miso ginger dressing at the store; I added ginger and soy we already had at home. Truth be told I was so in love with the picture of the completed dish I failed to see all of the ingredients it called for. Let’s call this one my “prototype”.  I added a bit of salt, freshly ground pepper, and red pepper flakes.

Not bad if I do say so myself. The kid scarfed it down and that is always a good sign. Maybe next time I will actually follow the directions and buy the correct ingredients. Or maybe I will build on this creation I came up with myself…a hard boiled egg, a few grilled shrimp, a bit of Chinese five spice..hmm. That sounds tasty.
